Black Bean Soup
As long as you have the ingredients in your pantry this soup is super quick and easy to make. Delicious and fat-free!
1 onion- chopped
3 cloves of garlic- minced
1/4 of a fresh jalapeno- diced with seeds left in
2 cans low sodium black beans with the liquid)
2 cups of low sodium veggie broth
sea salt to taste
avocado and cilantro to garnish
Heat your soup pot to medium-high heat. Add a tbsp of the veggie broth, then add in the onion, garlic, and jalapeno. Cook until the onions start to get soft. Add in the beans with liquid and the veggie broth. Simmer for about 30 minutes. Blend half of the soup and add back to the soup pot. Season to taste with sea salt. Top with avocado and cilantro.
